會先將咖啡果曬成類似葡萄乾表皮皺皺的狀態,再脫果皮蜜處理發酵
這種作法,風味上發酵氣息會比較濃郁,整體帶有葡萄酒的口感與酸質
而且果膠保存的量比其他蜜處理更高,結果是真的很有葡萄乾風味
總之,這也讓甜感獲得明顯的提昇
